Instructions

  1. In medium frying pan over medium heat, warm the olive oil until hot but not smoking. Add the onion, celery, and carrot. Cook, stirring occasionally, until the onion and celery are translucent, 5 to 8 minutes. Taste and season with salt.
  2. Transfer to an airtight container, ensuring the vegetables are completely submerged in the oil.
  3. Store in the refrigerator for up to 1 week.
