Try this simple, high-energy wrap. Start with a base of mashed black beans. Add creamy avocado, sweet mango, and tangy red onion slices. Include Southwest flavors and fresh cilantro. This wrap is good for meal prep: make several, wrap them in tin foil, and store in the fridge for an easy lunch.

  1. In a medium bowl, combine the first six ingredients (up to the garlic powder) and coarsely mash with a potato masher or fork.
  2. To assemble, spread the black bean mixture over the bottom two-thirds of each tortilla. Top with onion, spinach, mangoes, avocado, and cilantro. Fold in the sides and roll up like a burrito.
